Chocolate Protein Pancakes For One

Quick and easy protein pancakes to start your morning off right! I use chocolate protein powder and pair them with fruit and melted Nutella inspired by Zendaya’s (supposed) favorite breakfast.

Ingredients
  

Pancake Batter

  • ½ banana
  • 1 egg
  • ¼ cup flour
  • 1 dash cinnamon or pumpkin spice
  • 2 tablespoon milk
  • 1 scoop protein powder
  • 1 teaspoon vanilla extract
  • 2 tablespoon oil

Toppings

  • ¼ cup plain greek yogurt (optional)
  • chopped strawberries and bananas (or any other fruit of choice)
  • Nutella (optional)

Instructions
 

  • In a small mixing bowl, combine the banana, egg, flour, baking powder, spice(s), milk, protein powder, and vanilla until it resembles a slightly clumpy batter. Do not overmix.

  • Heat the oil in a large skillet over medium heat. When it starts shimmering slightly, pour the batter into 3 4-inch pancakes. Once they begin to bubble, flip and cook through.

  • Top the pancakes with yogurt, fruit, and Nutella. Enjoy!
